Yes, the ability to select and hide specific custom fields would provide a cleaner UI ... I too use server as variable fields in workflows

Can't believe no one else needs this! I have several Custom Fields to be used in forms and surveys, but they all show up in an ugly list in the "Additional Info" folder of the Contact tab.
