It would be awesome to have a field on the contact record that tells us the affiliate the contact was referred to us by, so we can easily see this on the contact record.

Yes. And the field needs to be accessible via API, not only manual.
This is necessary for tracking off-line referrals who convert to sales at some random time in the future.
