I'd love to be able to redirect someone to a web page after they submit our calendar. The use case is someone completes a calendar booking with our team, they then have to fill in a web form or we won't speak to them.

Why not just put your form first before slot selection? Go to Calendar Settings>Forms and Availability, then reorder the form and the calendar to put the form first. You can add any form you want to the calendar, and you can build the form with required fields, so that booking is not possible without the required information.

You can already do this.
You can do calendar submission web form OR you can do form calendar submission, then redirect to another webpage.
