When dealing with recurring appointments, even if you are booking more than one appointment, at the appointments history tab for the contact profile, it will show only one appointment, and when you click on the details, you will see that it's a recurring appointment and the dates. Even if it's a recurring appointment, they should appear independently to keep track of the history, and in case you need to change them individually, you would have more freedom.
At this moment, I can do this at a calendar level but not at a "customer" level - if I'm looking at the customer profile, for instance.
