You can do this through the Collective Booking Calendar—either while creating the appointment or after it’s been scheduled. In both cases, you’ll have the option to add additional users to the appointment.

It was primarily intended for service calendars, not just Round Robin calendars.
We would like the ability to change the appointment owner (for example a technician), or add a second worker for a booked service appointment.
We shouldn't need to use a Collective Booking Calendar for that in my opinion, does that make sense?
And also, the ability to add a team member for Round Robin would also make sense in my opinion.
The use case is basically: we use Round Robin as it should be used, but once in a while we get a complicated appointment and should have the ability to add a special technician to the appointment.

This would be a huge help to manage staff for different job appointments. In the cleaning space, we need to assign staff based on their availability and it would make it much easier to just assign the staff to the appointment after it's already been booked.

We have been doing a work around by adding the second team member as a Guest to the appointment. The problem with this is it creates a "Contact" record for that "User" and their email.
This has worked as a band-aid however I just realized that when that "User" receives an email from another "User" the email shows up in the "contact" conversation! We've had sensitive internal information get exposed as a result of this.
Adding an additional team member to the round robin calendar after initial booking should be a priority and is essential for any business that is dynamic and not a solo entrepreneur.
