Individual Subcategory Drip Control

We are operating an online school utilizing the courses as the main delivery of content for people. The attached picture shows how one years curriculum is laid out. Every 30 days members get a course drip of lessons and printable resources.
However we would like a way to manually advance a client further into the drip with account settings or member analytics. If we had the option to unlock progress without disrupting the drip for everyone else that would be great.
presently we've had to clone the course and set up a unique drip schedule on a per client basis but that isn't feasible long term we have about 200 clients to bring into GHL in the next few months and each would need slightly different drips, as we imported our products from kajabi. We have clients several months into the courses already, so restarting them at month one isn't an option.
It could be as simple as adjusting their course start date. For example if we had a client who started our course on october 12th, but we wanted to give them the first three months we could adjust their "start date" to july 12th which would effectively advance them three months into the drip if that makes sense.
whatever option is most feasible would be great. If we can write custom code to modify a clients course start date value that could be a workaround for now. But I would need to know how that variable is stored.
