Allow tipping on service calendars, and the ability to collect tips per staff member either from payments or from contact pages. Also, tipping should show standard options such as 10%, 15%, 20%, custom the same way that other systems allow. Make sure all 'tips' can be traced back to the staff member they were meant for in a report.
