Stripe supports being able to have a native CAD (Canadian Fund Account) but be able to issue subscriptions and payments in USD, EUR or GBP (for example). Now when the payment is processed it is by default converted into CAD however the invoices are all able to be issued in USD, and the client's cards are billed in USD, so it goes into Quickbooks as USD, the only issue is the currency conversion at the receiving bank which is not an issue.
The feature:
GHL has the ability to display quotes and invoices (and anything payment-related) in a currency of my selection. When Stripe is connected, then we have the power in GHL to select the currency OR match to the Stripe currency when importing products.
We are a Canadian agency with many US clients - we invoice in USD and manage currency conversions.
GHL should only follow what it is told as it is in no way a canonical currency touchpoint; those are Stripe and Quickbooks (and the receiving account).
