Sort By Category/Collection

In the sort by filter, we should be able to sort by different product categories. For example, a fitness equipment storefront should be able to filter by "treadmills", "Spin bikes", "rowers", etc.
This would also allow for unique landing pages/navigation meus to take customer's to specific pages JUST for that category/collection.

I am not sure if this is too late but in the store we need an option to show what to display by default. Right now its just everything there needs to be an option to show only certain products and then sort by category. For example we sell courses. But for a few we also sell coaching but I DO NOT want coaching on the main product page. I want it only shown in a category called coaching.

It would be nice if customers could filter products based on collection and sizes in the product list. Right now we only have the option to filter based on price and availability. Also, we should be able to set the default sorting so it's not always stuck on old to new
