Schema markup for products: Major SEO Issue/Opportunity

Currently, there is zero schema markup for product pages on our store. This is a BIG SEO issue.
I have other pages ranking within 30 days, but NONE of my product pages ranking.
Having a standard, editable schema would work, but we could really use the ability to add custom code to the product description so that we can put in custom schema markup so that it helps our product pages rank on Google like we could do on Shopify.
For SEO we want to have unique schema representing each product on each product page.

And sitemap.xml. Currently there is no way to add the products to sitemap, because of which the links need to be manually added to Search Console for indexing.
