It would be amazing to be able to filter by custom date fields in dashboard widgets. I have a dashboard that shows the status of leads who need to be enrolled in training courses, and being able to filter by their 'course enrollment dates' would be a huge improvement.

This is already supported. You can select a custom field of type "Date" in Date property of widgets configuration. Also you can select custom fields in Conditions too. Please check - https://ideas.gohighlevel.com/changelog/sub-account-dashboards-custom-fields-on-dashboard-widgets
