Conversation AI not updating Custom Fields

Basically, once conversation AI books an appointment with Client A, it books the service and dog breed correctly. But once Client A wants to book another appointment with a different service & dog breed, it's not updating it & it's using the same service & dog breed from the last appointment. So it would be great if the conversation AI could update the contact's custom fields.

Adding my notes to this, essentially if the custom field already contains information, the main 'conversation AI' can't update it
This is VERY inconvenient, for example if someone types in the incorrect email address and then wants to correct it, the fields won't update with the newer correct email
Or with the original post, there are many examples where we need to update an existing field
I see in the flow based builder the checkbox can be applied to 'overwrite' existing data - something like this in the cutom field updates would be great too so we can switch this on or off

I will suggest some workaround and this can be done .
it will be mostly done by conversation ai V3 . out new flow based builder .
