All users view each other's conversations.

A customer is complaining that every seller in his company has access to the conversations within the CRM. The ideal would be for these users to view only the conversations of the “Unassigned” contacts and those that are assigned to them. And not view ALL, would it be possible for this to be implemented?

I go through the same situation, I see all the users, I see everyone's conversations. It would solve the problem if I could only see those that are not assigned and those that are assigned to me. What is attributed to others, I could not see.
