Move the "activity updates" from the conversation thread in the contact card to the "Activity" section.

I'd like to see the "opportunity created" and "opportunity updated" updates moved from the conversation thread within the contact card as these are not part of the conversation.

Instead, these updates could be moved to the "Activity" section of the contact card.

Agreed. Keep the center column devoted only to interactions with clients. All other cards, put them somewhere else.
