Custom Field Date & Time Picker w/ if/else condition

I want to be able to have a if/else condition that checks how many minutes, hours, days a contact was created ago.
Use case is response rate
Customer replied as trigger, condition if contact was created between 1-3 days ago send down this branch, if 1 hour ago, minutes ago down this branch ect. Or have a native feature that will time stamp a custom field the first time the customer replies via a particular channel, and it can be measured
As of right now custom fields can only be formatted as a date picker and no time is attached to that date.
Also having a custom field that populated created date and time would be nice, unless I'm missing something there is not this feature, I am using a zap right now to update a contact custom field, which is a single line text

Having a datetime custom fields will help us in any way. DateTime custom fields will have the ability to select timezone, can also be used as a trigger.
