When creating a drop down custom field, we should be able to create labels that are independent of the value. For example if I want a drop down:

Dave Vincent

Brandon Ornelas

Jon Lozano

but I want the values of each to be numeric

This way we can create a dropdown that shows the value easiest for our users but passes the value necessary for the systems that key off that field.
