We need the ability to set Document Variables inside the "Send Documents & Contracts" workflow action using Custom Fields, Custom Values, and dynamic values mapped from upstream workflow actions.

Custom variables in documents are a powerful feature that allows users to dynamically insert values like “Project Name”, “Plan Type”, “Price”, and more into a document—without touching the design or structure. This keeps documents consistent and easy to manage.
However, the value of these custom variables is currently limited because they can only be accessed within the document itself.
This feature request is to make document custom variables accessible in workflows, unlocking several powerful use cases:
1. Send variable values in WhatsApp, SMS, or email messages (e.g., “Hi John, your project {{Project Name}} is now live!”)
2. Use custom variables in conditional logic (e.g., if Plan Type is “Premium”, then assign to a specific team).
3. Trigger actions based on variable values, such as applying a tag, adding a task, or sending a notification.
4. Reuse information from the document without duplicating data entry, improving automation and reducing errors.
This enhancement would make document custom variables a core part of automation, instead of being locked inside the document. Since these variables are already structured and user-defined, they’re ideal for reuse across the platform.
