Currently, the background color and text color for custom values in Documents & Contracts are not directly customizable through the document builder settings. While you can adjust background and text colors for standard text elements, the default styling for custom values (like the peach background) cannot be changed. When the text color in your document is white, it makes the text extremely hard to read. Requesting a feature to A, be able to set custom colors or B, don't use a background color to indicate custom values, use a border or other method to not interfere with the text color.
