It would be nice to be able to have a document sent immediately in a workflow when someone is marked as "won" or when they receive a certain tag, etc. For example, our agency serves a lot of micro gyms and they want to be able to send their membership contract over to new members to sign as soon as they mark them as "won".
It would also be great to be able to trigger some internal notifications or tasks when a contract/document is completed.

This can be done as an automation: Trigger - Stage or Status Changed > IF/ELSE with a branch for specific tag(s) > Send Document & Contract.
Internal notification on signing can be done with Trigger - Documents & Contracts - Status Signed is Signed/Accepted, Recipient type is Contact, Template is [choose template] > then build whatever WF you'd like with internal notifications. Hope this helps.
